The grapes were harvested in the cool of the night with extended skin contact for 12 hours to maximise aroma and flavour extraction before a gentle pressing in an airbag press to liberate the juice from the pulp and skins. The juice was quickly cooled and settled until crystal clear before being racked to a chilled stainless steel tank for a long cool fermentation. A selection of aromatic yeasts were used to highlight the tropical fruit aromas and the wine was bottled early to retain as much freshness as possible.
Colour: Pale straw with lime tints
Palate: The palate displays a crisp, lively acid balance and abundance of sweet fruit characters.
Aroma: This is a fresh ripe wine with lifted tropical aromas of pineapple, peach, passionfruit and honey dew melon.
